A few weeks ago I went out with a friend for drinks and gossip. After we had a few cocktails we got really hungry and decided to try a place near the bar we were at, called Jaja. Unfortunately we were too late and the kitchen was closed, but the staff was incredibly nice and they said they could brings us some snacks. That’s how I rediscovered my passion for sardines. We were served with this nice tin of sardines and sourdough bread. Alongside we had some olives, butter and… more bread.
Over the following days I kept thinking about those sardines. I decided to act on the craving and give them a try at home but with an edge. Here’s what I came up with:
1 tin of good sardines
Your favorite sourdough bread, toasted
1 red onion or shallot, chopped as thinly as possible
1 Tbsp of capers
2 Tbsps of butter
Red chili pepper lakes
2 fresh sage leaves
In a small sauce pan, melt the butter until the solids brown a little bit. Add the red chili pepper flakes, the sage, some lemon peel and a few salt flakes.
On pieces of toasted sourdough bread, drizzle a bit of the aromatic melted butter.
Add pieces of the sardines, then onions and capers.
Finish with a drizzle of freshly squeezed lemon juice and more red chili pepper flakes.
